3 day vs 4 day tickets? Travel insurance?

Currently trying to plan out our second Disney trip and I'm not sure if we should do 3 days or 4 days for tickets. We'd plan to add park hopper. We went for the first time earlier this month and my husband didn't love Hollywood Studios so he'd be totally fine skipping it this next time. I'm torn as I feel like there was one or two things we didn't do that I'd like to check out (off the top of my head Mickey and Minnie's Runaway Railway and just walking around to look at the Star Wars stuff), but I don't know if it's worth paying for a whole extra day. I feel like if I cared enough about it we could park hop over on either our Animal Kingdom or Epcot days and that'd be enough? We're also debating Friday-Wednesday or Friday-Thursday for our stay so if we only do 3 days of tickets we may lean Friday-Wednesday vs if we do 4 day we'd maybe lean Friday-Thursday since my husband wants some resort days. Anyone done less days and still felt like it was enough?

In regards to travel insurance, worth adding on? We didn't have it last time but we used a travel agent and I don't even remember them asking if we'd want to add it.
